Meeting at the La Bottega della Scuderia
Truffle walk in the local forest with Jacopo, a full licensed truffle hunter, who will share with you his knowledge and experience in a funny but informative program on the world of the Tuscan truffles.
Truffle didactic conversation at the La Bottega della Scuderia. Program conversation content Origin of the truffles in Tuscany. Classification and presentation of each different varieties.
The different seasons of the truffles + truffles and trees a special symbiosis
The real life of a truffle hunter. The relationship between the truffle hunter and his dog. Dog training techniques. Truffle cleaning and maintaining technique.
Luxury Wines and Olive Oil Tasting: Inside our cellar dating back to the end of the 1400s just in front of the Abbey, you will taste extra virgin olive oil and a selection of great wines from Tuscany and Italy: Chianti Classico, Brunello di Montalcino, Bolgheri Superiore, Barolo, Barbaresco, Amarone. We will introduce you to the tasting techniques, the different production areas and the reason why our wines and our olive oil have a relevant importance in the world.
We will explain the whole wine process from the soil to production, from destemming to fermentation, from vinification in steel and barrels to bottling. You also have the possibility to buy and ship all our varieties of wines and olive oil all over the world.
Truffle lunch at Ristoro l’Antica Scuderia
Example of a Menu:
- Entreé: Burrata al tartufo ( a local specialty of fresh cow cheese cream with truffle)
- First plate: Tagliolini al tartufo di stagione (Tagliolini with seasonal truffle)
- Second plate: Tagliata al tartufo con contorno di stagione (Tagliata with truffle and seasonal vegetables)
- Dessert: Tiramisù al tartufo (Tiramisù with truffle)
- Wine: Chianti Classico

Tour of the Badia di Passignano with the Monks, also called the Abbey of San Michele Arcangelo a Passignano that is a historic Benedictine abbey located atop a scenic hilltop, surrounded by cypresses. The abbey became one of the major sites of theVallombrosan order and itself a wealthy landowner by the mid-14th century. The refectory houses frescoes by Domenico Ghirlandaio and his brother Davide. The frescoes have been much restored over the last century.
